# How to Buy Real Raw Honey in Trinidad & Tobago: What to Check

To buy real raw honey in Trinidad & Tobago, check five things: the label says **unpasteurized** and names **where it was made**, the producer shows a **registered apiary number**, the honey is allowed to **crystallize**, you can find out **which region and season** it came from, and you can **buy direct** from the beekeeper.

## 1\. Read the label

A raw honey label should tell you, at minimum:

-   that it is unpasteurized (or raw), not just “pure”;
-   that it is a product of Trinidad & Tobago, and ideally which region;
-   who made it and how to contact them;
-   the size and net weight.

## 2\. Look for a registered apiary

Beekeeping in Trinidad & Tobago is governed by the [Beekeeping and Bee Products Act (Chap. 67:53)](https://rgd.legalaffairs.gov.tt/laws2/Alphabetical_List/lawspdfs/67.53.pdf), under which apiaries are registered with the Ministry of Agriculture. A producer who shows their apiary registration is telling you where their bees are and that they’re on record. HerbWai’s apiaries are registered as **No. 1577 and No. 1610**.

The Ministry of Agriculture, Land and Fisheries also supports local beekeepers through its [Apicultural (Bee) Services](https://agriculture.gov.tt/divisions-units/divisions/regional-administration-north/apicultural-bee-services/), which offers queens (nuclei) for new colonies, start-up frames, training in beekeeping, and bee removal.

## 3\. Expect it to crystallize

Raw honey is only strained, so pollen and natural sugars stay in, and over time it thickens and crystallizes. That’s normal, and it’s one of the clearest signs honey hasn’t been heated. Honey that stays glass-clear and runny for years has usually been heated (often to 70°C or more) and ultra-filtered. HerbWai honey is never heated above hive temperature, around 35°C.

To loosen crystallized honey, stand the bottle in warm water below 40°C. Store it at room temperature, out of direct sun; don’t refrigerate it, which speeds up crystallization.

## 4\. Ask where and when it was harvested

Honey from one region and one season tastes of that place: salty and floral from the Toco coast, dark and malty from the Biche wetlands. A producer who can tell you the region and harvest is selling single-origin honey, not a blend. ### How can I tell if honey is really raw?

Look for honey that is labelled unpasteurized, names where it was produced, and comes from a producer you can contact. Raw honey is often slightly cloudy and crystallizes over time. Honey that stays perfectly clear and runny for years has usually been heated and filtered.

### Is crystallized honey bad?

No. Crystallization is natural and is a sign the honey hasn't been heavily processed. To make it runny again, stand the bottle in warm water below 40°C. Don't microwave it or boil it, which damages the enzymes.
