# Immortelle Honey in Trinidad: Which HerbWai Honeys Have It

Immortelle, the tall tree whose orange-red flowers colour Trinidad’s hills in the dry season, is behind three HerbWai honeys: **Paria Reserve** (wild immortelle in the Paria rainforest), **Camparo Estate** (the immortelle that shades Camparo’s cocoa) and **Biche Dark Medicinal** (water immortelle by Nariva Swamp). Each is a single-origin raw honey from one region, so immortelle is one of several flowers in it, not the only one.

### Paria Reserve: wild immortelle in the rainforest

In the Paria rainforest of Trinidad’s Northern Range, HerbWai’s bees forage on wild immortelle alongside balata and mountain rose. Primary rainforest at elevations of 800-1500 feet. The canopy filters sunlight creating a humid microclimate where wild bees forage on endemic flora found nowhere else on Earth. ### Camparo Estate: the immortelle that shades the cocoa

Trinidad’s cocoa estates were planted with immortelle trees to shade the cocoa, and in Camparo those trees still stand. ### Biche Dark Medicinal: water immortelle by Nariva Swamp

In the Camparo cocoa estates, the immortelle shade trees provide nectar in March, during the dry season. Paria's harvest runs from February to May and Biche's from January to March, which also falls in the dry season.
