# Trinidad Honey Flowers: The Trees and Plants Behind Each Region's Honey

Honey guide

By [Jo Lee Herbert](https://herbwai.com/story), founder of HerbWai Honey · Updated 26 September 2026

Every HerbWai honey tastes of the plants its bees forage on, and in Trinidad those change from valley to valley: **immortelle and balata** in the Paria rainforest, **seaside grape and mangrove** on the Toco coast, **Yellow Poui and chaconia** in Savana Grande, **cocoa blossom and cedar** in Camparo, and **water immortelle and manac palm** in the Biche wetlands.

## Region by region

### Camparo: Cocoa Flower, Immortelle, Cedar

Secondary forest and heritage cocoa estates at mid-elevations. The interplay between cultivated cocoa and wild forest creates unique biodiversity.

What it does to the honey: **cocoa, caramel, cedar**. A rich, complex honey from the historic cocoa estates. Deep amber with distinctive notes of cocoa blossom and tropical hardwood. [See Camparo Estate](https://herbwai.com/honey/camparo).

### Savana Grande: Chaconia, Yellow Poui, Hog Plum

Rolling savannah and deciduous forest on rich clay soils. The open landscape and abundant sunshine create ideal conditions for the Yellow Poui, Chaconia, and Hog Plum trees.

What it does to the honey: **butterscotch, tropical fruit, poui flower**. A bright, sunny honey collected during the flowering of the Yellow Poui trees. [See Savana Gold](https://herbwai.com/honey/savana).

### Biche: Water Immortelle, Palm, Manac

Wetland forest ecosystem adjacent to Nariva Swamp. High humidity and diverse palm species create conditions for honey with exceptional enzyme activity.

What it does to the honey: **medicinal herbs, smoke, malt**. Highly sought after for its traditional medicinal uses. Thick, pungent, and complex. [See Biche Dark Medicinal](https://herbwai.com/honey/biche).

### Paria: Wild Immortelle, Balata, Mountain Rose

Primary rainforest at elevations of 800-1500 feet. The canopy filters sunlight creating a humid microclimate where wild bees forage on endemic flora found nowhere else on Earth.

What it does to the honey: **molasses, dark chocolate, earth**. Harvested from the deep canopy of the Paria rainforest. Dark amber color with notes of molasses and ancient wood. [See Paria Reserve](https://herbwai.com/honey/paria).

### Toco: Wild Cotton, Seaside Grape, Mangrove

Coastal forest ecosystem exposed to Atlantic trade winds. The sandy soils and salt-tolerant vegetation create a terroir that's impossible to replicate inland.

What it does to the honey: **sea salt, vanilla, light floral**. Light, crystalline honey with a unique saline finish from the Atlantic spray. [See Toco Wild Coast](https://herbwai.com/honey/toco).

## Why one region’s flowers matter

Most honey sold in bulk is blended from many hives and places, so the flavours average out. Keeping each region’s honey separate is what lets the flora come through: the same bees, the same care, but a salty coastal honey from Toco and a dark, malty one from the Biche wetlands. It’s the same idea as single-origin coffee or cocoa.

The easiest way to taste the difference is side by side. The [Five Regions Gift Set](https://herbwai.com/gift-set) has one bottle from each region, and our [honey tastings in Brasso Seco](https://herbwai.com/tastings) walk you through all five with pairings.

## Questions people ask

### What flowers do Trinidad bees make honey from?

It depends on the region. HerbWai's bees forage on wild immortelle, balata and mountain rose in the Paria rainforest; wild cotton, seaside grape and mangrove on the Toco coast; chaconia, Yellow Poui and hog plum in Savana Grande; cocoa flower, immortelle and cedar in Camparo; and water immortelle, palm and manac around Biche and Nariva Swamp.

### Why does Toco honey taste salty?

Toco sits at Trinidad's northeastern tip, where Atlantic sea spray coats the coastal wildflowers with trace minerals. The bees collect that mineral-rich nectar, which gives Toco Wild Coast its saline finish.

### Is there chaconia in Trinidad honey?

Chaconia, Trinidad & Tobago's national flower, is one of the plants around our Savana Grande hives, alongside Yellow Poui and hog plum. It adds to the tropical notes in Savana Gold.

### What gives Camparo honey its cocoa taste?

Camparo's bees forage where secondary forest meets historic cocoa estates, on cocoa flowers, the immortelle trees planted to shade the cocoa, and wild cedar. The result is a honey with cocoa, caramel and cedar notes.
