  1. Paria honey Primary Rainforest

    Deep rainforest heritage. Accessible only by hiking or boat, this honey is the purest expression of Trinidad's northern range biodiversity.

    Key flora: Wild Immortelle, Balata, Mountain Rose

  2. Toco honey Coastal Forest

    The remote northeastern tip. Wild, untouched, and rugged. The honey here captures the salty Atlantic breeze mixed with coastal wildflowers.

  3. Savana Grande honey Savannah & Deciduous

    The southern heartland. Rolling hills and rich clay soils produce a golden, classic honey with floral brightness.

    A transition zone of rich biodiversity where forest meets cocoa estates. Dark, complex, and historically rich.

    Mangrove and wetland ecosystems bordering the Nariva Swamp. The honey is dense, medicinal, and intense.

One place in every bottle

Like single-origin coffee, each HerbWai honey is kept to its own region and season, so the flora of that place is what you taste: immortelle and balata in Paria, seaside grape in Toco, Yellow Poui in Savana Grande, cocoa blossom in Camparo, water immortelle in Biche. HerbWai honey is never heated or processed: in Brasso Seco we simply spin the frames and bottle the liquid gold.

What “artisanal” and “unpasteurized” mean for us

Brasso Seco, Northern Range

A mountain village, a family of beekeepers.

There is something unique and special about locally produced honey, and local artisans Dereck and Jo Lee Herbert’s love and passion for their brand of HerbWai Honey is truly amazing. Since 2010, they have cultivated apiaries across Trinidad’s diverse landscapes, from the misty Northern Range to the sun-drenched southern savannahs.

HerbWai is a coming together of two great ancestors, “Hèrbert” and “Lee Wai”: strength, health, and hardy in constitution, the same with the quality of HerbWai Honey. Registered Apiaries No. 1577 & No. 1610.
