Trinidad's cocoa heritage dates back centuries, and the Camparo region remains home to some of the island's most historic estates. Here, at the transition zone between rainforest and cultivated land, our bees harvest nectar from cocoa blossoms, immortelle shade trees, and wild cedar, creating a honey of remarkable depth and complexity.
Secondary forest and heritage cocoa estates at mid-elevations. The interplay between cultivated cocoa and wild forest creates unique biodiversity.
Immortelle is one of the flowers behind this honey. Immortelle honey in Trinidad
A rich, complex honey from the historic cocoa estates. Deep amber with distinctive notes of cocoa blossom and tropical hardwood.
Our apiaries are located near these Trinidad landmarks:
The Camparo region was historically covered in cocoa estates dating back to Spanish colonial times. Today, the transition zone where secondary forest meets remaining cocoa plantations creates unique foraging grounds. Bees collect nectar from cocoa flowers, immortelle (traditionally planted to shade cocoa), and cedar. The result is honey with unmistakable cocoa undertones, caramel sweetness, and woody depth.
For tea: Savana Gold enhances green and white teas without overpowering them. Paria Reserve transforms black tea into something rich and complex. For coffee: Camparo Estate is our recommendation; its cocoa and caramel notes harmonize with espresso. Biche Dark Medicinal adds intriguing depth to strong, dark roasts.

Raw honey doesn't spoil when it's sealed and stored at room temperature out of direct sun, so a bottle of HerbWai Camparo Estate keeps for a very long time. Over time it will thicken and crystallize, which is natural for unheated Trinidad honey: stand the bottle in warm water below 40°C to loosen it. Don't refrigerate it.
Store our honey at room temperature, away from direct sunlight. Never refrigerate; cold temperatures accelerate crystallization. Raw honey never spoils; archaeologists have found 3,000-year-old honey still edible. If crystallization occurs, gently warm the jar in water below 40°C (104°F). Crystallization is natural and indicates pure, unprocessed honey.
No. Like all honey, raw honey should not be given to infants under 12 months of age because of the risk of infant botulism. If you have diabetes, allergies or another medical condition, check with a healthcare professional first.
