At Trinidad's most remote northeastern point, where the Atlantic Ocean crashes against volcanic cliffs, our bees harvest a honey unlike any other. The constant sea spray and coastal winds infuse the local flora with mineral-rich salt, creating a honey with an unmistakable saline finish that's prized by chefs and honey connoisseurs worldwide.
Coastal forest ecosystem exposed to Atlantic trade winds. The sandy soils and salt-tolerant vegetation create a terroir that's impossible to replicate inland.
Light, crystalline honey with a unique saline finish from the Atlantic spray.
Our apiaries are located near these Trinidad landmarks:
Toco sits at Trinidad's remote northeastern tip where the Atlantic meets the Caribbean. The constant sea spray coats the coastal wildflowers (wild cotton, seaside grape, and mangrove blossoms) with trace minerals. The bees collect this mineral-rich nectar, producing honey with a distinctive saline finish that pairs beautifully with fresh cheeses and tropical fruits.
Toco Wild Coast creates exceptional honey syrups for rum cocktails; its coastal minerality complements aged Trinidadian rum. Savana Gold brightens gin-based drinks. For whiskey cocktails, Paria Reserve adds the complexity of a fine aged spirit. Try our honeys in a classic Bee's Knees or a Trinidad Sour.

Raw honey doesn't spoil when it's sealed and stored at room temperature out of direct sun, so a bottle of HerbWai Toco Wild Coast keeps for a very long time. Over time it will thicken and crystallize, which is natural for unheated Trinidad honey: stand the bottle in warm water below 40°C to loosen it. Don't refrigerate it.
Store our honey at room temperature, away from direct sunlight. Never refrigerate; cold temperatures accelerate crystallization. Raw honey never spoils; archaeologists have found 3,000-year-old honey still edible. If crystallization occurs, gently warm the jar in water below 40°C (104°F). Crystallization is natural and indicates pure, unprocessed honey.
No. Like all honey, raw honey should not be given to infants under 12 months of age because of the risk of infant botulism. If you have diabetes, allergies or another medical condition, check with a healthcare professional first.
