Accessible only by hiking through dense jungle or by boat along the rugged coastline, this pristine environment produces honey of extraordinary character. Our Paria Reserve captures the essence of ancient immortelle trees, wild balata, and mountain rose in every golden drop.

The Paria region is primary rainforest, accessible only by hiking or boat. The bees forage on wild immortelle, balata, and mountain rose, plants that have grown undisturbed for centuries. This isolation produces honey with deep, complex notes of molasses, dark chocolate, and ancient wood. The high canopy filters sunlight differently, affecting nectar concentration and resulting in our darkest, most intense honey.
Toco Wild Coast pairs exceptionally with fresh, creamy cheeses; its saline notes complement goat cheese and burrata. Paria Reserve stands up to aged, sharp cheeses like aged cheddar or manchego. Savana Gold's bright floral notes enhance blue cheeses by balancing their intensity. Camparo Estate's cocoa notes make it perfect with brie or camembert.

Raw honey doesn't spoil when it's sealed and stored at room temperature out of direct sun, so a bottle of HerbWai Paria Reserve keeps for a very long time. Over time it will thicken and crystallize, which is natural for unheated Trinidad honey: stand the bottle in warm water below 40°C to loosen it. Don't refrigerate it.
Store our honey at room temperature, away from direct sunlight. Never refrigerate; cold temperatures accelerate crystallization. Raw honey never spoils; archaeologists have found 3,000-year-old honey still edible. If crystallization occurs, gently warm the jar in water below 40°C (104°F). Crystallization is natural and indicates pure, unprocessed honey.
No. Like all honey, raw honey should not be given to infants under 12 months of age because of the risk of infant botulism. If you have diabetes, allergies or another medical condition, check with a healthcare professional first.
