Trinidad Honey Harvest Calendar: When Each Region's Honey Is Ready

In Trinidad, HerbWai honey is harvested between January and July, region by region as each area’s trees come into flower: Savana Grande January to April, Biche January to March, Paria February to May, Toco March to June and Camparo May to July. From August to December we sell from those harvests while stocks last.

Why the harvest follows the dry season
Trinidad has two seasons: a dry season that roughly runs from January to May and a wet season through the rest of the year. Bees make honey from nectar, and nectar comes when the trees flower. In most of our regions the big flowering happens in and just after the dry season: the Yellow Poui turns the southern plains gold, and the immortelle and cocoa bloom in the estates. Heavy rain keeps bees in the hive and washes nectar from the flowers, so the wet months are quieter.

Camparo: May to July (cocoa flowering)
Camparo Estate. A transition zone of rich biodiversity where forest meets cocoa estates. Dark, complex, and historically rich. Key flora: Cocoa Flower, Immortelle, Cedar. Tasting notes: cocoa, caramel, cedar. More about Camparo honey.
Savana Grande: January to April (Poui flowering)
Savana Gold. The southern heartland. Rolling hills and rich clay soils produce a golden, classic honey with floral brightness. Key flora: Chaconia, Yellow Poui, Hog Plum. Tasting notes: butterscotch, tropical fruit, poui flower. More about Savana Grande honey.
Biche: January to March (dry season)
Biche Dark Medicinal. Mangrove and wetland ecosystems bordering the Nariva Swamp. The honey is dense, medicinal, and intense. Key flora: Water Immortelle, Palm, Manac. Tasting notes: medicinal herbs, smoke, malt. More about Biche honey.
Paria: February to May (dry season)
Paria Reserve. Deep rainforest heritage. Accessible only by hiking or boat, this honey is the purest expression of Trinidad's northern range biodiversity. Key flora: Wild Immortelle, Balata, Mountain Rose. Tasting notes: molasses, dark chocolate, earth. More about Paria honey.
Toco: March to June
Toco Wild Coast. The remote northeastern tip. Wild, untouched, and rugged. The honey here captures the salty Atlantic breeze mixed with coastal wildflowers. Key flora: Wild Cotton, Seaside Grape, Mangrove. Tasting notes: sea salt, vanilla, light floral. More about Toco honey.

Questions people ask
When is honey harvested in Trinidad?
Most of HerbWai's harvest falls between January and July: Savana Grande (January to April), Biche (January to March), Paria (February to May), Toco (March to June) and Camparo (May to July). It follows the flowering of each region's trees, which mostly happens in and just after the dry season.
Can I buy Trinidad honey outside the harvest months?
Yes, while stocks from the last harvest last. Honey keeps for a very long time, so bottles harvested in the dry season are sold through the rest of the year. Once a region's harvest is sold out, it's back when the next season comes in.
Which HerbWai honey is available right now?
As of 3 October 2026, Toco Wild Coast and Avocado & Mora are in season. Paria Reserve, Savana Gold, Camparo Estate and Biche Dark Medicinal are between harvests.
Does the season change how the honey tastes?
Yes. Each honey tastes of whatever was flowering when the bees made it: Yellow Poui in Savana Grande, cocoa blossom and immortelle in Camparo, water immortelle and manac palm in Biche. That's why a region's honey can vary a little from one year to the next.
